A GENTLEMAN’S GUIDE

Featuring friends of Trunk, Caleb and Joshua Ng of Twins Kitchen

For the stylish twins behind Hong Kong-based food and beverage consultancy and creative firm, Twins Kitchen, a typical workday starts early and ends late.

“We usually wake up very early, at four or five a.m. We meditate and clear up some emails, then we hit the gym or go for a run,” says Caleb. “Then, after an espresso shot at Interval Coffee Bar, we start on a series of internal meetings, followed by another series of meetings, wine tastings, food tastings or staff training. Usually, we end up going out for dinner, either for a new restaurant tasting or hosting chefs visiting town. If there’s no dinner, we brainstorm new dishes or restaurant concepts.”

We asked the pair for some insight into how on earth they fit it all in — and look good while doing it.

On dressing well on a time crunch…

“We stick to a daily ‘work uniform’. It usually includes water-resistant leather shoes or sneakers, just in case we need to work in the kitchen or shake a cocktail for a guest. We usually pair that with a T-shirt or shirt, under a blazer. As for the hardest-working pieces in our wardrobe, I think I speak for both of us when I say Incotex chinos — they’re good for business meetings or working at the restaurant, and even for travel,” says Joshua.

“We usually stick to a good silhouette and spice it up with one or two finer pieces,” adds Caleb.

On impressing in the kitchen with under 30 minutes on the clock…

“At home, steak and a good-quality salad with local greens is our go-to for entertaining. Always make sure you stock up on good steak! If it’s a big group, go for a tomahawk — it’s a guaranteed crowd pleaser,” assures Caleb.

As for what they’d be wearing? According to Joshua, “We’d be keeping it simple with a T-shirt and chinos, or jeans.”

On the most effective ways to recharge…

“Going for a run, taking a 20-minute power nap or taking some time out to meditate helps,” says Joshua.

Caleb adds, “If we have enough time to take a full day off, we definitely embrace nature and do something outdoors. A hike to Sai Kung, followed by a poolside barbeque sounds pretty perfect.”

On the single best time-management tip…

“Divide and conquer!”
