Make The Perfect Cocktail

Timothy Ching, mixologist at Hong Kong bar and restaurant Bibo, shows us how to make his award-winning D1 & T Tea cocktail.

Ingredients

60ml   D1 Gin

30ml   5 Citrus Juice (Calamansi, Yuzu, Lime, Grapefruit, Bergamot)

25ml   Tonic Syrup

45ml   Cold Passion Fruit Tea

Dehydrated grapefruit, lime wheel slice and fresh rosemary incense for garnish

Step 1

Pour the gin, citrus, syrup and tea into a shaker –
in that order

Step 2

Pack with four standard ice cubes

Step 3

Shake thoroughly and then strain into a pre-chilled glass

Step 4

Garnish with a dehydrated grapefruit slice, dehydrated lime wheel and a lightly torched rosemary incense
